Lil's 3 Choices Hamburger Delights Use the same recipe to make 3 different dishes! Creamy Meatballs, Salisbury Steak or Best Ever Meatloaf
all amounts are approximate and flexible
1 lb. lean ground hamburger (or 2 lbs. for meatloaf)
1/3 c breadcrumbs or cracker crumbs (1/2 c for meatloaf)
1/4 c finely chopped onions (or more to taste)
1 egg, slightly beaten
1 can (10 oz or 284 ml) cream of mushroom soup
1/3 c water (use at end)
2 tbsp chopped parsley (optional)
1 c sliced mushrooms (optional)
1 tbsp Worcestershire sauce (optional)
1/2 tsp salt (or to taste)
pepper (to taste)
Mix thoroughly 1/4 c undiluted soup (1/3 c for meatloaf), bread crumbs, beef, egg, onion - everything except the water and remaining soup. Shape into patties, 16 meatballs, or loaf.
Meatloaf - Place in a shallow baking pan. Bake at 375 degrees F (190 degrees C) for 1 hour 15 min. In a saucepan, blend remaining soup, mushrooms, water & 2-3 tbsp of drippings. Heat and serve with loaf as sauce.
Meatballs and Salisbury Steak - In fry pan, brown meat on all sides; pour off fat. Stir water, remaining soup and mushrooms together and pour over top. Cover and simmer 20 minutes, stirring and turning meat occasionally.
My Comments: We eat this a lot, it is our favourite way to eat hamburg. I usually use 1 1/2 lbs for any one of the variations, it does our family of 5 quite well then. I sometimes throw in spices, whatever is at hand. Or not. This is a very forgiving recipe.
